After getting some experience at wineries in New Zealand, Burgundy and Austria, Stefanie & Fabian Lassak started their own winery in Hessigheim with the 2016 vintage. They have specialized in the three varieties Riesling , Pinot Noir and Lemberger (Blaufränkisch). Old vines which grow on shell limestone, the soil type typical of this region, are in their focus. Most of their vineyards are placed on steep terraced slopes along the Neckar valley. Tiny crops and fermentation with wild yeasts support the individual character of their wines. Through their fine wine style without any over extraction as well as using biological cultivation methods in the vineyards, Lassak wines show the underlying variety and their origin.
