Family winery ELWINE Velké Bílovice s.r.o. continues the winemaking tradition of our fathers and grandfathers who lived, worked, cultivated vineyards and produced excellent wines here. We continue their work.

The quality of our wine is guaranteed by grapes from our own vineyards. We grow 6 white and 2 red varieties. Above all, our red wines win awards at important nationwide competitions. We see future development in organic vine cultivation. That is why in 2017 we planted 2 hectares of vineyards with new varieties, bred with increased resistance to diseases, such as Sauvignier Gris.

We want to make elegant wines of high quality that delight the senses and break down barriers between people. The greatest recognition of our work is not the prizes from competitions, but the interest and praise of our customers.

Métaphore is my personal story of cultivating the lost senses of magic and poetry around us while looking at the world with fresh eyes. It’s an introspective beer journey that is deeply rooted in my local terroir of the Czech Republic and timeless traditions of beer- and winemaking.

In each of my beers, I strive to bring a touch of poetry, a sense of wonder, and a sense of magic into the world. They are my thoughtful expressions of time and place, driven by my constant cultivation of what it means to be authentic and beautiful.

These principles have led me to produce beers exclusively from what grows and coexists around me. Beer as it used to be: a product of a place and its people, with the graceful help of time. Defined not only by the seasons they rest in wooden barrels and the use of local organic ingredients but also by a common sensibility and restraint.

Most of Métaphore’s beers undergo spontaneous fermentation or use our own farmhouse yeast culture, cultivated over the years. Usually, they are aged in wooden barrels for extended periods—ranging from one to three years, or occasionally even longer. I firmly believe that the use of spontaneous or native fermentation captures the essence of the elusive concept of beer “terroir” and its inseparable authenticity. This is why the majority of Métaphore beers are crafted this way.

We are a small family winery from Čejkovice. We take care of the vineyards according to the principles of organic farming in order to keep the soil fertile and healthy for the next generation. The basis of good wine is healthy and ripe grapes that come from honest handwork. We pick the grapes by hand, grind them and let them macerate. This gives the cider its unique taste. Thanks to healthy grapes, there is no need to intervene in the ripening process. It is only important to control how the wine spontaneously ferments and then matures for a long time on coarse lees in wooden barrels.

In our winery, we strive for gentle processing of grapes with a minimum of interventions. Our red and most white wines are aged in oak barrels to obtain the best characteristics. Maceration on the skins, subsequent malolactic fermentation and long aging on lees can produce a wine with a unique taste. The result is a wine with a lower total sulfur content.
In addition to the quality of the wine, we also focus on the health of our vineyards. The old vineyard we take care of is located in the Hustopeče cadastre in the Stráná vineyard line and was planted in 1980. Here we carefully monitor the growth of the grapes and here too we try to do as little as possible to the vineyard in order to preserve its natural character.
In 2024, we are planning to plant a young vineyard directly on our home land in Vranovice, close to the Hájek forest. The soil here is sandy loamy, with sandy loam and very fine loess as the base.
Our annual production is limited to three thousand bottles. Therefore, you can be sure that each bottle is carefully crafted.
